Bacon Upside Down Cornbread on the Kamado Joe
Everyone loves bacon. Lots of folks love cornbread. So how about a bacon upside down cornbread? Here's the recipe: 5 slices thick cut bacon 6 slice thick cut bacon, diced 1/2 cup bacon drippings (reserved from the bacon cook) 2 cups cornmeal 1 cup all purpose flour 1 tablespoon baking powder 1 tablespoon fresh chopped thyme 1 1/2 tsp kosher salt 1/2 tsp ground black pepper 2 1/2 cups whole buttermilk 2 large eggs 1 1/2 cups shredded Gruyere cheese Preheat your Kamado Joe to 425°F. In a 10" cast iron skillet, cook your bacon slices until they are almost done. Remove from pan and drain on paper towels. Drain the grease into a measuring cup. Cook the diced bacon until crispy. Reserve the drippings in the measuring cup until you have 1/2 cup. Wipe skillet clean. Put two tablespoons of the bacon drippings in your pan and put it on the grill to preheat for 8 minutes while you assemble the cornbread batter. Place all dry ingredients in a large mixing bowl and wisk together. Place buttermilk, eggs, and the remaining bacon drippings in another mixing bowl and wisk together. Add the dry ingredients to the wet ingredients and mix thorougly. Remove the pan from the grill. Place the 5 bacon strips in the bottom of the pan. Pour the conrnbread batter on top of the bacon and spread out evenly. Place back on grill and cook 30-40 minutes until a toothpick inserted into the center comes out clean.
