Creamed Corn Cornbread
Recipe: Please LIKE me on Facebook! https://www.facebook.com/pages/Hey-Hedy-Whats-Cookin/732198823507335?ref=bookmarks Creamed Corn Cornbread 1 1/2 cup cornmeal (I used yellow) 1/2 cup all purpose flour 1 cup of creamed corn 1 cup of buttermilk or sweet milk (I used powdered buttermilk) 2 eggs slightly beaten 1-2 Tablespoons sugar (optional) 2 teaspoons baking powder 1 teaspoon salt 1/4 cup bacon grease (you may use sunflower oil or whatever oil you prefer, just not olive oil) First of all add your grease to your pan and place in preheated 350 degree oven to heat up. Next, mix cornmeal, flour, baking powder, salt and sugar together in mixing bowl a give a good stir. Add in the eggs and milk, give a quick stir and then add the creamed corn, again stirring well until thoroughly incorporated. Next, pour hot grease into the batter and SLOWLY (that grease is HOT) stir until evenly mixed. Pour into your skillet and bake at 350 for about 35-40 minutes, checking towards the end with a toothpick, bamboo stick or a butter knife. Slice and spread on butter if desired and ENJOY! NOTE: that is NOT a hair at the end on the slice I held up, it is a bit of corn silk. LOL Just sayin' :-b
