Mexican Cornbread Casserole
Hi. This is Stephanie Manley, with CopyKat.com.Today, I'm going to show
you how you can make Mexican Cornbread Casserole.This is a great dish
because it is all-inclusive. You don't reallyneed to serve any sides with
this; this is complete. Let's get started.
We are going to brown 1 pound of hamburgermeat. I'm going to add 1 package
of Taco Seasoning Mix. I happen to be usingmy own special blend here; you
can use your own special blend. If you happento have any onion or peppers
in your fridge, go ahead and chop those up,put them in here. It's getting
a lot of extra flavor.
Let's get started on your cornbread. I'm taking2 packages of cornbread mix
and I'm putting them in a bowl. Then I'm goingto read the directions, and
I'm going to add whatever else my packagesays it needs so my cornbread
will be complete. In my case, this happensto be 2 eggs and 2/3-cup of
milk. You can use whatever brand of cornbreadthat you like. I just happen
to love the sweet flavor of Jiffy mix. We'regoing to give this a quick
little stir. Our cornbread's not done. We'regoing to add �-can of whole
kernel corn that we've drained. Then we'regoing to add �-can of cream-
style corn. We're going to stir this in, andthis is going to make the base
of our Mexican Cornbread Casserole.
Next, grab a 13x9-inch baking pan and giveit a quick little spray with
your favorite non-stick spray. Take half ofthe cornbread mixture and
spread it in the bottom of the pan. Don'tworry; you don't have to get it
too exact. Spread it in the best that youcan. It's going to expand a
little bit while it's baking. Here comes theremainder of the cream-style
corn and the remainder of the whole kernelcorn that's been drained. Just
go ahead and spread them out.
Next comes one of my favorite ingredientsin here, that is a small can of
chopped green chiles. I love these things;they're not too spicy, they're
perfect. They add just a little bit of heat.What comes next? Cheese. I
love to use Velveeta cheese in here. I justhappen to be using a 4-blend of
Mexican-style cheese in here right now. Spreadthat over everything else.
Next comes our hamburger meat. Spread yourhamburger meat over everything.
Try to get it as evenly as you can. Nobodylikes the side with all
cornbread.
What comes next? The remainder of our cornbreadmixture. Go ahead and spoon
that over the hamburger meat and spread itout the best that you can.
You're not going to get it exact, but don'tworry about it, again,
everything's going to spread and puff up.The cheese is going to melt and
it's going to be just fabulous. Here comesthe remainder of our grated
cheese. We're just going to put that overhere. It's just that easy to do.
We're going to pop this into an oven that'sat 350 degrees. It'll take
about 30 to 40 minutes. There you go. Youare going to have some fabulous
Mexican Cornbread Casserole.
